Ingredients
18 medium-size potatoes, washed, peeled and cut into 4 pieces
3/4 cup butter
1 tsp butter
3/4 cup mayonnaise
1/2 cup milk
2.5 tsp salt
1.5 cup Swiss cheese, shredded
Oregano leaves
Steps
- Preheat the oven to 350 degrees F
- Grease a glassware pan with 1 tsp butter and set aside for future use
- Place the potato chunks in a large pot pan and cover them with water. Bring to a boil
- Cover, reduce heat to medium and let simmer 30-40 minutes or until potatoes are tender when pierced with a fork
- When potatoes are cooked remove from heat and drain thoroughly in a colander
- In the glassware pan, mash potatoes with a potato ricer while adding 3/4 cup butter, mayonnaise, milk and salt
- Mix these ingredients until they are well combined
- Cover the mashed potatoes with swiss cheese
- Bake for 15 minutes or until the cheese melts
- Broil until cheese is golden brown for about 10 minutes
- Garnish with oregano leaves
